- Roll out the pie crust and fit it into a 9-inch pie dish. Trim excess dough and crimp the edges.
- In a large bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg until well combined.
- Sprinkle the cheddar, mozzarella, and feta cheeses evenly across the bottom of the pie crust.
- Pour the egg mixture over the cheeses, making sure everything is evenly distributed.
- Sprinkle chopped chives on top if using.
- Bake for 35-40 minutes, or until the quiche is set and the top is beautifully golden brown.
