Makes about 12-15 bombs
Ingredients
For the Potato Coating:
- 2 large russet potatoes, peeled and grated (be sure to squeeze out excess moisture)
- 1/2 cup all-purpose flour
- 1 egg, lightly beaten
- 1 cup panko breadcrumbs
For the Filling:
- 1 cup shredded mozzarella cheese (I sometimes mix in sharp cheddar for extra flavor)
